Paris-Brest com creme de café e nozes / Paris-Brest with coffee and walnuts cream

PARIS-BREST COM CREME DE CAFÉ E NOZES

Sobremesas é algo que adoro fazer, vocês já sabem. E massa choux ainda mais porque a minha mãe adora e está sempre a pedir para fazer. No entanto, embora confeccionasse profiteroles e eclairs, um paris-brest foi novidade para mim. Já os tinha visto várias vezes mas nunca surgiu a oportunidade de o fazer. Mas com o desafio da Lia e da Susana na edição deste mês do Sweet World, surgiu este Paris-Brest com um creme crocante de café e nozes, perfeito para finalizar um almoço em família.

E para quem não sabe,  Paris-Brest é uma massa de formato redondo (tipo massa de sonhos) em formato de roda, criado em 1910 por Louis Durand, um pasteleiro de Maisons-Laffitte, a pedido de Pierre Giffard para comemorar o Paris-Brest-Paris, uma corrida de bicicleta que ele criou em 1891. Uma massa tradicional francesa deliciosa, espero que gostem ... 



MASSA CHOUX:
- 180g de farinha 
- 2,5dl de água
- 50g de margarina
- 1 pitada de sal
- 1 casca de limão
- 4 ovos médios

Método tradicional:
Coloque a água, a casca de limão, uma pitada de sal e a margarina num tacho. Leve o tacho ao lume e quando a água ferver, retire o limão e junte a farinha de uma só vez e mexendo bem até obter uma massa que se descole do tacho. Deixe arrefecer cerca de 20 minutos. Coloque a massa na batedeira e vá juntando os ovos, um a um, batendo bem. Deixe repousar mais 10 minutos.
Aqueça o forno a 200ºC. Num tabuleiro forrado com papel vegetal, forme um círculo e disponha a massa sobre ele, formando uma coroa (use uma colher ou um saco de pasteleiro para ajudar a colocar a massa). Leve a assar no forno durante 15 minutos e depois reduza para 180ºC e deixe mais 15 minutos. Deixe arrefecer sobre uma grade. 
PS: os fornos variam muito e pode necessitar de mais ou menos tempo, o importante é que a massa saia seca e crocante.

Método Yammi ou robot de cozinha similar:
Coloque no copo a água, a casca de limão, uma pitada de sal e a margarina. Programe 4 minutos, temperatura 100ºC, velocidade 3. Retire o limão e junte a farinha de uma só vez, programando 20segundos, velocidade 4. Deixe arrefecer cerca de 20 minutos.  Programe 2 minutos, na velocidade 4 e vá juntando os ovos, um a um. Deixe repousar mais 10 minutos. 
Aqueça o forno a 200ºC. - 500ml de leite
- 3 colheres (chá) de café instantâneo
- 2 colheres (sopa) de farinha
- 1 colher (chá) de aroma de baunilha
- 2 ovos
- 2 gemas
- 80g de açúcar amarelo
- 12 nozes
- 4 colheres (sopa) de açúcar + 2 colheres (sopa) de água

Método tradicional:
Aqueça 2/3 da quantidade do leite. Misture o restante leite com a farinha, o açúcar, os ovos, as gemas, o café e a baunilha. Misture agora o leite aquecido aos poucos, mexendo sempre. Leve ao lume, mexendo sempre até engrossar. Transfira para um recipiente e cubra com película aderente. Deixe arrefecer por completo.
Entretanto, leve ao lume uma frigideira com as colheres de açúcar e água até obter um caramelo claro. Acrescente as nozes partidas e mexa bem até ficarem todas caramelizadas. Retire do lume e verta para uma folha de papel vegetal. Quando estiver frio, pique grosseiramente com uma faca.

MONTAGEM:
Abra a massa choux ao meio, recheie com o creme e polvilhe generosamente com o crocante de noz. Cubra com a restante massa choux e polvilhe com açúcar em pó.

PARIS-BREST WITH COFFEE AND WALNUTS CREAM

- 4 medium eggs

- 4 tbsp of sugar + 2 tbsp of water

Traditional method:

Heat 2/3 of the milk. Mix the remaining milk with the flour, sugar, eggs, egg yolks, coffee and vanilla. Add the heated milk slowly, stirring constantly. Bring to the heat, stirring constantly until thick. Transfer to a bowl and cover with plastic film. Let it cool down completely.
Meanwhile, heat a frying pan with the sugar and the water until you get a clear caramel. Add the chopped walnuts and stir well until they are all caramelized. Remove from heat and pour into a baking paper. When cold, chop with a knife.

Let it cool down completely.
Meanwhile, heat a frying pan with the sugar and the water until you get a clear caramel. Add the chopped walnuts and stir well until they are all caramelized. Remove from heat and pour into a baking paper. When cold, chop with a knife.


FINISH:

Open the paris-brest in half, fill with the coffee cream and sprinkle generously with walnut crunch. To decorate, sprinkle with powdered sugar.
